- Updating readmes andmain.tf from 2024->2025
- Updating EC2 instances to reflect most up to date Intel instances from https://aws.amazon.com/ec2/instance-types/
- Upgrading some m6i -> m7i
- Testing some examples (amazon-linux, gen-ai stable diffusion, gen-ai opea)
- Marketing material needs to be updated in read mes.
2024 -> 2025 in all readmes.
Bringing the instances up to date from https://aws.amazon.com/ec2/instance-types/

AWS M7i instances are 4th Generation Sapphire Rapids. Emerald Rapids is in Azure v6
