I'm very interested in this project and want to use it one in the near future.

Has anybody tried it on Hetzner yet?

I haven't tested with Hetzner but Litestream should work with any S3-compatible storage. You just need to use the configuration file for configuring the replica and set the appropriate endpoint & bucket. Here's an example of using the config approach with DigitalOcean: https://litestream.io/guides/digitalocean/#configuration-file-usage

For anyone looking to use litestream with hetzner I got it working with the following config:

access-key-id:     XXXXXXXXXXXXXX
secret-access-key: XXXXXXXXXXXXXX
dbs:
  - path: /home/app/db-name.db
    replicas:
      - type: s3
        bucket:   bucket-name
        path:     db-name.db
        endpoint: https://region-name.your-objectstorage.com
        region:  region-name
        sync-interval: 1s
