@backstage/plugin-scaffolder-node needs to be updated

Expected Behavior

@backstage/plugin-scaffolder-node stuck to ^0.6.2, makes it incompatible with projects using ^0.8.0

Current Behavior

There should be a new version compatible with @backstage/plugin-scaffolder-node ^0.8.0

I tried making a PR for this but I'm not confident enough to make big changes (1.37 / 1.38 starts to drop support for the legacy backend system and this repository still use it in the backend app and some plugins don't support the NBS yet). Not sure how to work around that (cc @punkle @Xantier)

Ended up forking the scaffolder actions we use to allow upgrades until this gets resolved 😞
